17 November 2015: Savoury Bread and Butter Pudding

I thought that I had invented this myself years ago, but when I searched the Internet for ideas I found that there were many versions! Search for "savoury bread and butter pudding" and you'll find lots of recipies with detailed quantities - since we cook for about 75 at Messy Church I don't have the quantities for a family in mind when I cook at the Methodists but this should be a guide!



  1. Preheat oven to 175 C / Gas mark 4.

  2. Cook the sausages and then, when cool, cut them into eight slices

  3. Fry the bacon, then add the onions, then leeks, then mushrooms. Leave to cool a little.

  4. Butter some bread and make sausage sandwiches with the sliced sausage - cut them into squares, triangles or rectangles as you wish or according to the size and shape of the dish you use.

  5. Butter the dish then arrange the sausage sandwiches in the dish - leaving room for it to rise.

  6. Spread the bacon, onion, leek and mushrooms over the sausage sandwiches.

  7. Whisk three large eggs and add a pint of milk, mix this in well then pour it over the sausage sandwiches - leave it to stand for at least half an hour so that the bread can soak up the milk and eggs - add more milk and eggs to ensure that the sausage sandwiches are covered.

  8. Sprinkle the mixture with grated cheese

  9. Cook in an over at 175C (gas mark 4) for 30 to 40 minutes - check that the custard has set before serving

  10. Serve with mixed vegetables
